SUBSTANCE: method involves adding soya protein
paste to raw ground milt and fried onion. Soya protein is preliminarily prepared
from soya grain by barothermal processing and holding of processed grain in
5%-smoke flavoring preparation solution for 30 min.
EFFECT: improved organoleptical properties,
balanced composition and increased nutritive value of product.
