THE TECHNOLOGY OF "FLOURLESS BREAD".
The important merits of "flourless bread
production are high profitableness and independence, it is the result of:
- utilization of different varieties of wheat
and rye, including the mild ones;
- increase of wheat and rye grain utilization
for 20%;
- expenditures upon acquirement, storage and
transportation of grain are to a great extent lower, than upon flour (three
times and more);
- prime cost reduction of ultimate product for
30 % at the expense of excluding the technological production cycle and
flour storage.
It is confirmed by increased interest in "flourless
bread" technology on the part of grain manufacturers, who have the
opportunity to make bread independently without the operations of processing
grain into flour.
The technology of "flourless
bread" production includes in itself the following operations:
- surface processing of grain;
- steeping with the following dispersion;
- then the operations of traditional technology
- dough kneading, with addition of formulating components, fermentation,
dressing, moving and baking.

1. HELLER
Consists from two blocks :
- Shelling block
- Block of air clearing
A) Shelling block
It is intended for surface grain processing,
ensures the fulfillment of the following operations: grain measuring, its
moistening, softening, shelling and air separation shelling products. Shelling
block is stocked with noria to mechanize loading.

B) Block of air clearing

2.WASHER
OF Grain
It is intended for grain
processing in water or in disinfectant solution after peeling. Simultaneously,
washer loads steep capacities by processed grain. Driving dough trough are used
as steep capacities.

It is intended to obtain raw material from grain
for dough mass production, which is the main component in "flourless bread"
production. Dispenser is exploited completely with dough trough and filter.
